Lately I have mainly been hanging around the apartment, doing a little school work, cooking and resting.
Today when I got home from work, I had a notice from UPS on the door that said they delivered a package to the office for me. I got really excited because I thought someone sent me something, but once I went down there I remembered that it was just a lab manual for one of my classes :(
I’m kind of bummed about my experimental food science course. It’s taught by the same professor as nutritional biochemistry and I had a hard time with that class. Fingers crossed that I can do better this semester!
Tonight for dinner I just fixed something easy: a grilled piece of chicken (cut down the middle and split in half) with some broccoli on the side. I topped the chicken with a leftover homemade salsa I had previously frozen. I love frozen stuff! Just pop it in the microwave and it’s ready in no time. This salsa is made from mango, red pepper, red onion, lime and cilantro. I just put everything in the food processor and pulsed it a few times.
A laundry helper. He had to stay up there to make sure I put everything away.
