This weekend has gotten off to a slow start. I fell asleep at 7pm Friday night and didn’t wake up until 11AM the following morning. I guess I was catching up on lost sleep from when I was sick.
My food intake has been less than stellar so far this weekend:
Breakfast = leftover chinese
Lunch = strawberry / blueberry smoothie
Dinner = steak w/ garden salad
Snack 1 = way too many snickerdoodle cookies
Snack 2- Froyo with the hubs
The day has been uneventful because I’ve been studying my ass off for a Medical Nutrition Therapy final I have coming up. I have to get a B- in the class in order to pass it and right now my average is a 90. According to my less than stellar math skills, I only need to make a 37 (as in 37/100…) to get a B-. I will be s.o.g.l.a.d. when this class is over.
In internship news…
I had been working on my PAL (Prior Assessed Learning) credit application for a little over two weeks now and finally was able to submit it on Friday! Woo.
PAL credit is internship credit for work or volunteer experience. You can opt out of 6 weeks worth of rotations with PAL credit at USU. I applied for 2 weeks credit for my School Nutrition Education rotation and 4 weeks for my Food Service School Management rotation. If I get this credit, which I think I will, then I will only have to do 7 weeks of a food service rotation instead of 13.
Putting together my PAL application was more involved than I initially thought it would be. I had to go through each competency that is met during the rotation and provide proof that I had already accomplished that through work experience. I submitted over 50 pages of samples with my FSSM application.
This week I will hopefully be finalizing my rotation schedule, getting all of my vaccine documentation, making my flight reservation and applying to a USU scholarship. Just gotta finish this last class first…
