Hey, everyone! I hope all of the east coasters out there are safe and warm during this winter weather. Both K and I are home from work today and the snow is coming down here in the QC.
This snow storm reminded me of the winter right after K and I got married. We were living in Virginia and had recently purchased our first home. We were definitely not prepared when we got our first snow storm that winter. We didn’t even own a shovel! I had stocked up on groceries right before the storm but they were all refrigerated and frozen items. We ended up getting over a foot of snow and lost power. Not having heat or electricity was bad. Not having many food options was even worse.
Flashback to 2009:
We haven’t forgotten that winter They are calling for heavy snow storms and possible power outages in North Carolina this week and we are a little more prepared this time around.
Here are some shelf-stable food ideas if you’re worried about losing electricity
Fruits: Bananas, apples, oranges, pineapple, and pomegranates. Other fruit like pears, peaches and avocado can be ripened on the counter as well. Cupped fruit, like applesauce cups and canned fruit are also options… look for fruit canned in light syrup or 100% fruit juice. Skip dried fruit since these are higher in sugar.
Vegetables: Cucumber, tomatoes, peppers, onions, potatoes and some squashes.
Protein: Nuts, like almonds or cashews. Look for nuts that are raw (not roasted) and unsalted. Peanut butter. Canned our pouched chicken and fish like chicken, tuna, salmon or sardines (yep, I said sardines… they are good!). Tuna/chicken salad kits.
Grains: You’ve got a good variety here since a lot of grains don’t need to be refrigerated. Some options include sliced bread, thin or mini bagels, english muffins, cereal and crackers. Look for grain products that are high in fiber to help keep you full.
If you do experience a power outage and lose food in your fridge then check with your homeowner’s insurance to see if they will cover your loss.
