Today, I want to talk about brussels sprouts. Why? Because I love them! They are my favorite vegetable and it makes me sad that they have such a bad reputation. Back in the day, I thought brussels sprouts were disgusting. I once attempted to cook them by boiling them (mistake #1) and they were bitter with a pretty interesting aftertaste. No thanks.
I decided to give them another shot a few years ago after seeing a stalk of brussels sprouts in Trader Joe’s. I mean really, how can you pass one of these and not be intrigued?
I browsed around online and found that many people recommended roasting them. I gave it a shot… it was like I was tasting a completely different vegetable compared to the first time I tried them. Now I make them all the time. It was fun to purchase them on the stalk but it seemed to take forever to prep them. Now I just buy them by the bag from Costco.
Here is how I cook them….
Step 1: Trim the stems of the sprouts and peel off any bad-looking leaves. I sometimes leave them whole but this time I decided to cut them in half. I referenced YouTube videos to see how this was done the first time I bought them fresh.
Step 2: Place the cleaned sprouts in a bag and toss them with olive oil, salt and pepper. For reference, I usually use 2lb. brussel sprouts, 2 Tbsp olive oil, 1 tsp salt and a few twists of fresh ground pepper.
Step 3: Spread them out in a baking dish.
Step 4: Bake them on 375 degrees F for 20 minutes. Take them out of the oven and give them a good stir after the first 10 minutes. You will know they are done once they turn a very dark green / brown color.
As a side note, brussels sprouts are rich in Vitamins K and C, and 1 cup contains ~3.5g of fiber.
So in conclusion, I hope you take 2 things away from this post:

I agree with your post!! Thanks to you I gave them another shot! Much better roasted than boiled!! I am still trying to convince my Fiancee they are good!!
I’ve tried to get my husband to like them… no such luck yet :)
