Hey there!
Another Monday means another ‘Monday Eats’ post. I’m happy to report that my diet has improved significantly since my post from last week.
My throat is still pretty sore so I am primarily sticking with soft foods, purees, and soups. Prior to my surgery, I had pureed and frozen a bunch of different food items to have for when I was feeling better. I started the morning with pulling some banana oatmeal and baked apples from this freezer stash. The oatmeal is pretty thick and the apples are thin, so I decided to mix them together to even them out.

Oatmeal is one of my favorite breakfast foods but it is pretty labor intensive, so I’m happy I thought to freeze some to have during my recovery ::pats self on back::
My sister stopped by for a quick visit (yay!) and we decided to go out to lunch. I am loving going out to eat these past few days after spending almost 2 weeks laying on the couch. We went to Panera and I got the baked potato soup & baguette. I was able to eat the middle part of the baguette by soaking the bread in the soup.
I usually have broccoli & cheese soup at Panera but I’ve already been living off of my mom’s broccoli soup for the past few days. I have yet to try anything tomato-based or acidic, so I’ve mostly stuck with creamy soups so far.
I had chocolate pudding as an afternoon snack. I honestly wasn’t very hungry for a snack, but I needed a mixer for my crushed pain meds. I have been mixing them with Gatorade for the past 2 weeks but I’m so tired of drinking that!
I was pretty excited for dinner tonight: salmon, steamed spinach and diced mushrooms with onions. I was excited for fish because I’ve mainly just been eating pureed chicken as my protein since I’ve been able to eat solids. The mushrooms and onions were leftover from some soup I made the other day, and I didn’t want them to go bad.
This ended up being a really good meal because I smashed up the fish and didn’t have to chew it too much.
My goal right now with my meals is honestly just to eat something I’m not very hungry and I’m still in a little bit of pain, so I figure I will just eat whatever I can handle and not worry about how well-rounded my diet is.
I’m so happy to finally be feeling better and eating well again! I keep having dreams about eating Mexican, specifically chips and salsa, so hopefully that can happen in the next week or so
