Hey guys! Hope you’re having a great start to this week. The weather outside is completely gorgeous here in Charlotte today. I can’t wait until it stays like this all the time!
Time for another Monday Eats post…
Breakfast
I have yet to sleep through the night since I stopped taking all of that pain medication and it is driving me crazy! I tossed and turned all night and got a glass of milk around 4am. Sometimes milk makes me sleepy… no such luck this time.
I hardly ever eat breakfast at home on the weekdays but since I couldn’t sleep, I enjoyed a nice meal by myself this morning. I had a cup of coffee and a bowl of banana oatmeal mixed with baked apples (leftover from my tonsillectomy pre-prepared foods).
I am loving the convenience of grabbing these out of the freezer and popping them in the microwave. I’m thinking of freezing another batch of oatmeal after I use these up.
Lunch
I picked up this quinoa/chicken dish in the frozen section at Costco yesterday. It was pretty good.
I have a love/hate relationship with freezer meals but this one was pretty decent. The ingredient list looked good and this whole bowl had 520mg sodium. That’s more sodium than I would generally prefer, but it wasn’t a big deal to me today since a lot of the other things I ate were lower in sodium.
Snack
I had a banana w/ a scoop of peanut butter when I got home from work.
Dinner
We had grilled tuna tonight with a asparagus and mashed sweet potatoes.
K got stuck at the office later than usual, so we are just hanging out at home tonight. He is pretty excited about the How I Met Your Mother finale. So am I… so I never have to watch that show again
