I’m constantly on the lookout for delicious and healthy side dishes… sometimes I think they’re harder to find than entrée recipes! I’m especially interested in side dishes that incorporate fiber and/or whole grains because my main entrees usually don’t include those (unless I make pasta).
Last week, I was browsing allrecipes.com for sides dishes and found this recipe for Black Bean Quinoa. This was perfect because I had a bag of red quinoa in my pantry that had been sitting there forever I really needed to use up. I made it last night for dinner and it was a hit in our home. (sorry about the phone pic… it was really just that kind of day!)
I served the Black Bean Quinoa with chicken (seasoned with a Mexican seasoning), plain greek yogurt and salsa. The only modification I made was I left out the corn…. there seemed to be plenty of carbs without it This dish was great and I will definitely be incorporating it into our regular dinner cycle.
An added bonus was that this side dish is pretty versatile. I ended up making a Mexican-inspired meal but it would also go well with roasted chicken or even cajun-seasoned fish. I’d definitely recommend it if you’re looking for something new to try!

You really make it seem really easy together with your presentation but I find this
matter to be really one thing that I think I’d never understand.
It sort of feels too complicated and extremely broad
