Hey there! Time for another WIAW post.
So I’m changing it up a little bit today! My WIAW posts in the past have been recapping my meals on my days off because I have the time to take better photos and cook more involved dishes. Today’s post is what I eat when I’m working all day and my schedule is packed.
Breakfast
I left for work at 6am and grabbed a banana and almonds for breakfast. I ate the banana in the car and followed up with the almonds after I get to work.
I started to get hungry again around 10am, and since I knew I won’t be able to eat lunch for another couple of hours, I ate a greek yogurt that I brought from home.
Lunch
I picked up lunch from the cafeteria around noon, which included garlic chicken, green beans and collard greens. The garlic chicken came from the cafeteria’s “healthy” menu options (which I’m pretty sure are lower in sodium and fat)… the green beans and collards did not
Snack Attack
I was craving chocolate in the late afternoon and this hit the spot! I eat candy when I feel like it but I am really trying to limit sweets to fun-sized when possible… especially since I have been eating leftover birthday cake like it’s no one’s business.
Dinner
I had originally planned on making this awesome baked ziti dish for dinner but it required a stop at the grocery store and it was p.o.u.r.i.n.g. down rain on my way home from work. So my future culinary masterpiece quickly turned into a simple spaghetti dish that I’m kind of embarrassed to post here. Hey- you win some, you lose some.
We had some spinach in the fridge that looked like it was on its death bed, so I steamed it and stuck it in my spaghetti. I also had a glass of milk on the side.
So those are my eats for the day! After reading over this post, here are some areas where I see I could have improved:
- Swapped my banana out for an apple or pear to increase my fiber intake
- Added an additional fruit serving somewhere
- Switched either my collards or spinach to a different vegetable to add a little bit of variety
- Made my own greek yogurt by topping plain yogurt with some fruit (less sugar and preservatives)
Just wondering for those of you who work long days (I leave for work at 6am and get home around 6pm), do you find yourself eating more grab-and-go items on these types of days? Do you prep food at home in advance? Do you pack your lunches or buy things at work? I’d love to get some new ideas
Spaghetti is what we had for dinner last night too, but with kale rather than spinach! It’s a classic that never gets old.
Why feel embarrassed to post the spaghetti? It looks great!
I think the feeling comes from having an awesome dinner planned and then turning to the default dinner of spaghetti :)
Coconut chobani looks so good. Unfortunately, I eat at work, and we only ever have the plain variety. It’s good, and easy to customize, but it’s no coconut.
Spaghetti and spinach is a great dinner, I always find it’s the simplest, and ugliest to photograph food that tastes best. :)
