Happy Monday!! Hope you had a great weekend. Here’s a brief recap of mine…
I helped a friend move in Davidson and then she treated to the Pickled Peach for lunch. TPP is a fun little restaurant on Main Street that has a variety of sandwiches, salads and soups. If you’re familiar with the Davidson area, it’s right beside Summit Coffee.
After lunch, we stopped by the Davidson Beverage Company for a bit. They have an awesome beer selection and it’s a fun place just to hang out and grab a drink.
Back at home, I’m proud to say I’ve stayed on top of my physical therapy exercises this weekend. They only take about 30 minutes but it’s easy to forget about them! I always seem to end up with someone who wants to help me.
My knee pain seemed to be significantly improving, but I experienced a setback when I was swimming last week that has left me in worse pain than when this all started. I was doing the breast stroke and all of the sudden I just felt an acute pain that has been nagging me since then. It’s so frustrating. I have PT tomorrow so hopefully that can give me some good advice.
I am working Tues-Fri this week so I have the day off. I’m going to take advantage of my free time today to get some meal prep out of the way. Here’s what’s on the menu this week:
- Lemon butter tilapia with quinoa and garden salad
- Steaks with baked potatoes
- Garlic turkey roast
- Slow Cooker Beef Stew
My plan is to assemble the lasagna today so it will be ready to throw in the oven tomorrow when I get home from work. Also, I’m trying out a new recipe for the slow cooker beef stew this week. I hope it turns out okay Do you have anything exciting on the menu this week?Hope you have a good week!!!
