Today’s What I Ate Wednesday post comes from my meals this past Monday. It was my day off and I spent a lot of time in the kitchen doing some food prep for the week ahead. Here’s what I ate that day:
Breakfast
I made pumpkin pancakes, which came from a Trader Joe’s box mix. I typically try to make pancakes and waffles from scratch but there’s just something about the Trader Joe’s seasonal items that really get me… they’re hard to say no to!
(P.S. I bought these during the same shopping trip when I spilled coffee all over myself. Good times.)
Unfortunately, I forgot to check to see if we had syrup before I made these. Epic mistake. I ended up having to eat my sad pancakes with just butter
Lunch
I got lucky in the lunch department because I had some good leftovers from dinner the night before: lemon butter tilapia, quinoa and a garden salad. I typically just eat a sandwich for lunch on my days off so this was a nice treat!
Snack
I roasted a butternut squash in my food prep adventures, and I saved the seeds and toasted them for an afternoon snack. If you like toasted pumpkin seeds then you should try these as well… they’re good!
Dinner
I made my first inaugural fall dinner this week with a slow cooker beef stew. Something about stews and soups right when the weather is getting crisp really just hits the spot!
I used cubed beef, carrots, onion, potato, salt, pepper, flour and bay leaves. I cooked it on high for 5 hours and the beef was cooked perfectly.
Dessert
Merlot.
