Hey guys! So far this morning has been a total bust. I got up at 4am to go swimming but my knee is really bothering me and decided after I was up and about that I should skip a workout this morning. So now it’s 5am and I’m just hanging around before it’s time to go to work.
Today’s WIAW post comes to you from Monday’s meals. Monday was my day off of work and if you follow along here then you know I liked to post my day-off meals… much more interesting!
Breakfast
I met my friend in Davidson for a late breakfast at Toast Café. Charlotte actually has some *amazing* breakfast spots, but my friend lives in Mooresville and needed to stay close to home that morning. So Toast it was!
I’ve eaten at Toast a few times and always gotten something different. This time I chose a Greek omelet with wheat toast and a side of bacon. I wanted sooooo badly to get the french toast but I also had dinner plans and thought an egg white omelet might be a better decision. We’ll just ignore the fact that I got bacon. That’s always a good decision, right?
I’m kind of sad to say this but I was less than impressed with my omelet. It was really, really bland. I was so busy talking to my friend that I didn’t realize until I was almost finished that they forgot to include the feta cheese… that’s the best part!
Lunch
I scrounged around in the fridge and managed to pull together lunch from a bunch of leftovers. I had some pesto chicken I had made for dinner the night before, so I used that as a salad topping.
I also included some random veggies. Most importantly, I added avocado.
I’ve started to skip salad dressings and now just drizzle my salads with EVOO, a vinegar of my choice and top with cracked pepper. I used red wine vinegar on this salad but balsamic is also a favorite!
Dinner
Hawthorne’s pizza was having a special for the month of October where they offered their 18” pizzas for $10 every Monday. I’m not one to turn down a good deal on pizza, especially not Hawthorne’s.
I ordered the Greek Pizza, which is my usual. I realize it was bad planning to get the Greek omelet that morning, but my pizza actually ended up being a nice consolation, feta cheese and all
I normally order the 9” personal pan pizza but splurged on the 18” since they both were almost the same price. The only thing is that now I have 3/4 of a pizza taking up the entire top shelf of my fridge. #firstworldproblem
They are going to make great leftovers, except I always wonder if people at work will judge me if they see me heating up slices of pizza as big as my face. YOLO.
Thoughts on meals for this day:
- Not enough calcium?
- No fruit! I need to do better about that.
- Good job on veggie intake. This is sometimes my downfall.
- Honestly, not too bad considering I went out to eat twice. Need to take advantage of times with friends when you can get them!
What is your favorite type of pizza? Mine is definitely anything with olives and/or mushrooms!
Do you have some great local pizza places in your area or do you mostly stick to chain restaurants? I’m lucky because Charlotte has some great places. When I lived in VA, I ordered a lot from Domino’s.
Sorry to hear about the bum knee! Hopefully some rest will do it good :)
Veggies are usually hard for me to get in too, but I’ve been pretty good with them lately! And oh my gosh I have been CRAVING some good pizza!!
Thank you!
