I’ve been horrible about taking pictures for a complete day, so this post is going to be a hodgepodge of random things I’ve eaten in the past few days. I apologize in advance.
Homemade Granola Bars
This was my first try at making homemade granola bars and I went with the pumpkin spice variety (duhhhhh).
I’ll just be honest with you and say that they didn’t turn out very well! They weren’t sweet enough and the consistency reminded me of a stale granola bar. Oh well… ya win some, ya lose some. At least they look pretty?
Chia Seed Pudding
I had leftover canned pumpkin from the disaster above ^^^^^^ so I decided to use it to make pumpkin spice chia seed pudding. This pudding is pretty simple to make because all you need are chia seeds and milk of your choice!
Of course you want to jazz it up with whatever other ingredients you like. I used a lot of things I use to make pumpkin spice oatmeal (minus the oats). I plan on posting the recipe later this week because it turned out pretty good! I guess this is my redemption for the granola bar fiasco.
I prepped it in a little mason jar so it would be easy for me to carry in the car. And because I just wanted to use a mason jar.
Visiting Whole Foods
The Whole Foods near us *finally* opened… I feel like it has been forever since they first announced that they were putting one in Huntersville. I browsed around and hit up their hot bar for lunch the other day.
My meal included mac and cheese, collard greens, lentils, curry chicken, spaghetti squash, a butternut squash and cranberry dish and steamed carrots. I love the Whole Foods hot bar for a nice variety of vegetables. It definitely hit the spot.
PSA: Whole Foods has canned organic pumpkin for $1.29 / can! Time to stock up.
Salads
Can’t get enough of them lately, especially when avocado is involved.
My favorite thing to do these days is top my salad with leftover meat from previous meals. Yesterday, I topped my salad with a leftover asian-glazed pork chop. It was the bomb. Dot com. (<—Sorry, couldn’t help myself!)

Question:
Have you ever tried Chia seeds before? If so, what do you think about them?
I prefer them soaked rather than in the raw. I find that if I sprinkle them over something and eat them right away, I ended up with chia seeds all in my teeth. This never happens when I soak them first.
A coworker asked me to describe the flavor and I think they taste a little nutty, at least when I put them in a smoothie. What do you think??
I love chia seeds. But I need to try them with pumpkin before pumpkin season has left us! Because that sounds amazing.

Chia seeds are a staple in my diet! I add them to my oatmeal in the morning and make a plantain/chia seed wrap with them. I love overnight oats too:)
A plantain/chia seed wrap sounds good!
