Ummmmm. So. Yeah. I have been really slacking at sharing my food creations, photos, successes and failures with you lately. I’m kind of in a food rut right now. Sorry about that!
But I dooooo have an awesome casserole to share with you today… a pumpkin spice french toast casserole. Mmmmmm.
This past weekend, I attempted to make a french toast casserole using the exact same ingredients I use to make french toast. The only difference was that instead of cooking each piece in a pan, I cubed the bread and combined everything in a casserole dish. I scaled the recipe for 12 portions and it was the perfect size for the average glass casserole dish.
I wanted to add a touch of fall to the dish so mixed in some canned pumpkin and pumpkin spice to the mixture. If you are a pumpkin lover then you will love this!
After baking for 20 minutes in 350 F, things came out perfectly!
On a different note, I wanted to share something exciting that happened recently. I signed up for Be The Match!
Be the Match is a national bone marrow donor program. I have thought about signing up before but was recently given the push I needed after learning that someone I know is in need of a bone marrow transplant.
Signing up for the program has been pretty simple so far. I filled out a questionnaire on their website and less then a week later received a kit to take a buccal swab. I plan on completing the swab kit and sending it back to them on Friday when I have the day off of work. I will be sure to share everything with you when I do that!

That french toast looks super yummy. I love bakes like that especially when you’re having company over.
