Good morning and happy Wednesday!
Today’s What I Ate Wednesday post comes from my day off earlier this week. I always forget to take pictures of my food when I’m out and about or at work so it’s easier to put together this post when I’m at home (and the lighting is better, too!).
I started the day with an egg and grapefruit on the side for breakfast. I always include 1 egg yolk when I’m making an egg dish for the added nutrients, fat and calories.
I have been preparing grapefruit different ways lately. This time I cut off the peel and sliced it. I actually liked this way the best because you don’t have to deal with scooping it out of the grapefruit (kinda messy) and these guys are not the easiest to peel.

My breakfasts when I’m at home are completely different compared to when I’m at work. On workdays, I usually have 2 grab and go items and eat one around 7am and the other around 9ish. When I’m at home, I like to cook something and usually eat breakfast all together.
On this day, I had my typical lunch meal which was tuna salad with crackers on the side.
Tuna Salad = canned tuna, mayo, mustard, capers, relish and cracked pepper
I picked those crackers at Costco. They are higher in fiber and calories (1 serving is 170 kcal), which I think fits in well with my lunches. I’ve been packing them to take to work and dipping them in hummus.

Snack… not pictured, but I ate way too many tortilla chips when I was getting things ready for dinner.
I was trying to be creative for dinner to use up 2 packs of chicken breasts that had been bugging me in the freezer. I ended up putting them in the crock pot with 2 cans of diced tomatoes (pureed), garlic, oregano and basil. The combo was pretty good but I wish I had drained the tomatoes first and hadn’t let the chicken breasts cook for so long. Served with sides of roasted asparagus and a garden salad.
I’ve always found that chicken breasts are tricky to cook in the slow cooker without them drying out.
For my salad dressing, I mixed up EVOO with some red wine vinegar and cracked pepper. More tasty (and healthier) than the bottled dressing.

Dessert: Not intentional, but I have no self-restraint when it comes to the candy aisle at Fresh Market. It reminds me of being a little kid in a candy store! I always pick up a bag of these little raspberry candies. I ate approximately 500 of them that evening.
Thoughts on the day:
Probably shouldn’t have had so much candy or tortilla chips It’s better to portion some out rather than eating them straight out of the bag.
It would have been great to increase my vegetable intake just a bit. I could have chopped up celery and carrots and tossed them in the tuna salad or added some onions and spinach to my egg.

I’ve been loving fresh grapefruit lately :) It’s so delicious! I’m not a big egg fan but if I do eat them, I like them with the yolk on top of toast :)
I honestly don’t think I’ve ever had a plan egg on top of toast… I will have to try it out :) I am a fan of an egg, ham and cheese sandwich, though.
It’s weird because I can’t remember the last time I ate grapefruit but the fact I didn’t like it yet now you make me want to give it another try.
If it makes you feel any better about those candies: I eat chocolate every day and had four squares of Lindt yesterday. The only reason I’d probably consider it a ‘guilty’ pleasure is the price. My wallet’s not happy ;) .

Give grapefruit another try! I love it, although I find that people either love it or hate it.
The candy raspberries are my favorite too!! Seriously, I can’t resist them. If I see them in a store I need to tell whoever I’m with to strop me from buying them. It’s bad hahaha
Also that grapefruit looks perfect. I’ve been on a grapefruit kick lately and the way I love it is by throwing it into my Ninja blender and getting it super smooth like a juice and drinking it
I’m glad I’ve found someone else who likes them! Most of my friends hate them. I like how gummy they are in the middle.
I’ve been prepping grapefruit lots of different ways this winter so I’ll have to just blend one up to try it. Thanks for the idea :)
I love those little raspberry candies!! I am so bad when it comes to the candy aisle and bulk section of stores. i could literally stay there for hours and eat bags full at a time.
I know!! It’s kind of like being in paradise :) Sometimes when I’m in the candy aisle at Fresh Market, I wonder how I became a dietitian.
I actually just bought grapefruit yesterday and I’m looking forward to trying them broiled! I’ve never seen those raspberry candies- I’ll have to check them out!
You will have to report back and let me know what you think of them broiled. It definitely takes away the tartness… but I couldn’t decide if that was a good thing.
I honestly thought those candies were the real deal! You could totally trick someone into think you were just be extra healthy and eating lots of fruit ;)
Maybe that is what I’m telling myself when I can’t stop eating them :)
I LOVE those little raspberry candies!! They totally remind me of my childhood. Sometimes you just need a healthy dose of sugar :)

Thank you! I actually think this is my new favorite way to eat a grapefruit. It didn’t take long to cut up and was so much less messy than scooping the fruit out of the sections.
