Hey Guys! Happy Hump Day!
It’s supposed to really snow on tonight and I’m kind of excited because I don’t have to work tomorrow. Snow is so much more enjoyable when you can watch it while indoors!
So, today it’s time for another What I Ate Wednesday post. I started these posts to participate in Jenn’s link-up over at Peas and Crayons. However, she’s had a few issues with people not really following her guidelines for the link-up so she decided last week to put things on hold for a bit. I’m not sure what the end result will be, but I am going to continue these posts for now because I like sharing my food with you guys.
Today’s WIAW post is coming from my Sunday meals. You might be shocked by this but I started the day out with 2 eggs and half of a grapefruit for breakfast.
I’m sorry about the lack of variety with my breakfasts recently. What can I say? I’m a creature of habit. I like that eggs are convenient to make and are packed full of nutrients. I’m sometimes a smoothie girl but I just can’t bring myself to sip on an icy drink when it’s freezing outside.
Lunch was interesting because I was really craving some hummus. Sometimes I will just eat a hummus sandwich, but I decided to spice things up by adding a little somethin’ extra.
I had a cucumber in the fridge, so I topped my sandwich with that and also added some feta cheese. Because feta cheese is amazing. This ended up being a great little Mediterranean-themed sandwich. I kept thinking how tasty it would have been with either roasted red peppers or a tomato, but I didn’t have any on hand. What I did have on hand was extra feta cheese, which I happily ate straight out of the container. I have no regrets.
I ate the rest of the sliced cucumber dipped in leftover hummus.
Part of me thought I ate way too much hummus this day, but another part of me thought that there is no such thing as too much hummus.
And of course, I had a glass of milk on the side.
Okay, so dinner. You may remember last week that I was really wanting to try some new recipes, and then this Barefoot Contessa lemon chicken popped up on my Facebook newsfeed. I decided to make it for dinner on Sunday night and it turned out great!
I’ll be the first to admit that my chicken dishes sometimes turn out bland, but this recipe was full of flavor. That is likely attributed to the lemon zest. I am usually guilty of letting my chicken cook too long, thus drying it out, but I made sure to stay on top of it this time and check the temp with a food thermometer.
I had a head of cauliflower chillaxin’ in the fridge so I decided to roast that. I love roasted cauliflower so much better than raw. I did accidentally let it cook for too long, so it was a little blackened around the edges. So yeah, we had blackened roasted cauliflower.
What, have you never heard of that side before?
Kinda random, but I also made some lentils to go with the meal. What actually happened was I meant to fix some rice but once I got dinner going, I realized we didn’t have any. Not checking your ingredients prior to cooking = rookie mistake. I had a lot of beans and lentils, though, so I figured “what the heck” and just went for it. Not the most cohesive menu, but it worked
I will actually say that I thought the lemon chicken dish was even better as leftovers the following day. I think the taste of the herbs really had a chance to set in the sauce. What a nice treat to have some leftovers like this at lunch instead of a sandwich!
Dessert was 3 of these Trader Joe’s dark chocolate peanut butter cups. If you have not tried these then you need to go buy them right.now.

Is anyone else afraid they are going to zest off their finger when they are zesting a lemon?! Or is that only me?

Yeah, the cauliflower were a little crispy but you couldn’t really tell they were burnt by the taste.
YUM! your eats look delicious! …I love how you saved room for a little treat at night! (I ALWAYS do :)) …also, we have those Trader J’s Dark Ch. PB Cups in my kitchen right now! They are sooooooooo good! I love their Dark Chocolate Expresso Beans too! You HAVE to try them! Amazing :)

Yum – everything looks so good to me! I love hummus and would have to agree – it’s never too much hummus. I love it on a bagel with cucumber and other veggies so your sandwich looks great! Happy to see you and others are still sharing your WIAW! Just joined the bandwagon and i love seeing what everyone is eating and sharing mine!

Lots of sunshine over here! Today I got caught in traffic and was stopped for a while and my arm near the window was absolutely baking even with the a/c on! haha
I’ve strangely never thought about dipping cucumbers in hummus even though I really like both of them separately! You just gave me a great new idea!
Everything you ate sounds so yummy! I love the idea of the cucumber, hummus, and feta sandwich! Feta is my absolute favorite cheese :)
