Hey guys! Happy Wednesday… time for another What I Ate Wednesday Post.
Breakfast
Anne recently wrote about making poached eggs, which is something I’ve always wanted to do but felt intimidated. Her experience inspired me to give it a shot and it turns out it wasn’t so hard!
I ended up using this Alton Brown recipe from the Food Network. I made 2 eggs with sides of center cut bacon and blueberries. (I know I’ve mentioned this in other WIAW posts but I choose center cut bacon over regular and turkey bacon because it has less fat and usually less sodium.)
The verdict: I didn’t hate the poached eggs, but I think I prefer pretty much every other kind of egg over poached I think I like my eggs best with a little crisp around the edges. But at least I tried it, right?
Lunch
I made a simple lunch of tuna salad: tuna, mustard, relish, avocado, tomato and cracked pepper. I typically eat tuna with crackers or on a sandwich but I skipped that part today because I was still kind of full from breakfast. I didn’t feel like I was being too skimpy because the avocado (extra calories + healthy fats) added some staying power to the meal.
Snack
Compulsively ate these sweet potato chips. I swore I would never buy another bag of them for this very reason, yet here I am. Full of sweet and salty goodness.
Dinner
I had a bunch of random ingredients in my fridge and ended up putting them all together to make some little stuffed peppers.
I basically halved the peppers and layered them with herbed goat cheese and ground beef (seasoned with salt, pepper and italian seasoning). Pretty random but turned out well!
I have been on a berry kick because I bought blueberries, raspberries and blackberries at the grocery store and I knew they would stay good for approximately 27 hours in my fridge.
I also discovered that peppers and herbed goat cheese make an excellent snack.
If I were to do it over again, I would probably mix the goat cheese with the ground beef first and then add them to the pepper. I layered the goat cheese on the bottom this time for portion control but it ended up adding an extra step to the dish.
What’s a completely random recipe/meal you’ve made lately?
Do you use the word “dinner” or “supper”? I always use dinner but at work, everyone says supper.
Do you like goat cheese? I loooooooooove it but can’t buy it all the time. I have no self control.
Goat cheese + ground beef + peppers + seasoning.. what a tasty sounding combination. I may give it a try for lunch one of these days.
To answer your question – I say dinner.
I recommend getting the herbed goat cheese. It is so good on peppers!
I’m definitely trying goat cheese on peppers- goat cheese is awesome on everything though. PS your eggs looked poached perfectly, its a shame you didnt like them more… mine never turn out that good, haha.
I think they were just too soft for me? I don’t know.
I’ll eat your share of poached eggs – they’re my favourite! I have silicon cups that I use for poaching and I love them.

And now you are making me want to try poached eggs! I admit that I have been a bit too intimidated to try making them, but if you say that I can do it then maybe I will try ;)
It really wasn’t hard. I’m one of those people who needs to try a recipe a few times before I’m not screwing it up but these turned out well on the first try. So they can’t be that hard to make, haha.

Good job on the poached eggs! Those were my grandpa’s favorite, but I’ve never had any. I’m an over easy fan, just a bit runny so I can swipe it up with my toast! ;)

Those stuffed peppers look adorable AND delicious. I could see that being a good after-work snack for my husband and I. Too often, cheese and crackers win out and then we ruin our appetite for dinner!
Yeahhhh that was the problem with this meal! I ran out of room on the pan and still had some peppers and cheese left, so I started eating the raw peppers and cheese while the rest was cooking.
