Happy What I Ate Wednesday! Today’s post is kind of short and sweet, so here’s a full day of recent eats:
Breakfast
2 eggs with 2 kiwis.
I’ve noticed my fruit intake has been super low recently so I’ve tried to add in some variety this week.
Snack
Banana oatmeal: 1/3 C oats, 2/3 C milk, 1 large diced banana, cinnamon and vanilla extract. Plop of peanut butter in the middle. Love.
Okay, so this was a really heavy “snack”. The truth is I just wanted some oatmeal. Definitely didn’t eat it enough this winter!
Lunch
Leftover grilled chicken and a bunch of random vegetables from different meals. Half of the vegetables were roasted and half of them were grilled, but it worked!
Tip: Do your vegetable prep/chopping and once and cook a huge batch. It will last you throughout the week and save you time on busy days.
Dinner
Spaghettiiiiiii. I like to toss some vegetables into my pasta dishes, so this time I added some roasted tomatoes. Can’t wait for summer and garden tomatoes!!
What foods have you been eating/loving lately?
Funny I’ve been craving oatmeal lately too even though we’ve had much warmer weather. Although cold over night oats are always good too :-)
We had been having really warm weather and then all of the sudden it got cold. Maybe that’s why I’ve been craving them!
Ah I haven’t had a kiwi in for-ev-er! Used to LOVE them! Your pasta looks amazing :)

I used to obsessed with kiwi but kind of forgot about it. Adding it to the shopping list! :)
Are you near an Aldi? They sometimes carry 4-packs, and I usually pick up a carton when they are in stock.
Well now that you’ve posted about them…I’m craving kiwi!
But my fiance’ and I recently got a Ninja blender so I’ve been doing lots of smoothies and working on my recipes that include spinach because I think it’s such a great way to add fruit and veggies into your diet!
