Hello, my friends… Happy Monday!
How was your weekend? I worked but still managed to squeeze in a few extra things.
I hit up the farmer’s market for a bit of produce (I got there late so ended up with all of the reject cucumbers. Poor guys)
Including this watermelon
My kitchen was a disaster area when I was done chopping up this thing. Even my clothes got caught in the crossfire
And then I ate 1/2 of it in one sitting. Go me.
I bulk prepped some slow cooker chicken for lunches this week.
And made this bomb ass salad.
I hung out with this boss. She hates it when I work on the weekends.
I admired my little baby tomatoes growing on my back porch.
And mourned the future loss of my basil plant. #blackthumbstrikesagain
And I wrote a full review of my new Erin Condren Life Planner! Stay tuned this week for that post plus a giveaway!!
I have a much needed day off today. I’m starting it out with a dry needling appointment followed by a gyno appointment. Does that sound like fun or what?! At least I’m following it up with lunch with a friend.
Have a good day
What did you do this weekend?
Are you good at cutting up watermelon? My issue was that I didn’t have a serrated knife. I seriously almost stabbed myself.
Any tips on saving my basil plant?
Hi Sam! I just got turned onto your blog! I’m an RD as well and graduated from Virginia Tech! I currently live in Greenville, SC. So fun to know other VT-RDs!
Awesome!!! When did you graduate? Go Hokies! I have family in Greenville :)
I spent the weekend with friends and family and it went by WAY too fast! That watermelon looks absolutely incredible, but I never buy any because I am SO horrible at cutting it. And I have such a problem paying a premium for pre-cut. But it looks so delicious I may just have to cave and go buy some this week! Hope you have a fabulous day!
I watched a youtube video about cutting one, lol
I have always had a hard time with basil but I think I was overwatering. Basil likes it super hot/sunny and pretty dry. Pick off the dead leaves and save it! Good luck!
Thanks for the tips. I’m wondering if I should plant it in the ground? I might also be overwatering.
I already killed my basil this year too. I can’t seem to keep that one alive but I also have a few tomatoes sprouting which makes me happy.
Glad to hear I’m not the only one killings plants, lol
I’ve given up on plants, especially since I live in a condo. I’m the worst :)
I swear pets think the weekend is all about them. Merlin snuggled under a blanket (it was 90F outside!) while I napped on Saturday. Goofball.
I thought potted plants would be the way to go since I’m probably going to move when my lease is up, but nope. Killing them.
When I make fruit salads in the summer my kitchen looks like a juicy war zone. Between the watermelon, cantaloup and honey dew there seeds, juice and rinds everywhere! haha
A juicy war zone… i love that :)
I can’t remember the last time I had watermelon, but hopefully this will change over the 4th of July weekend. You have me convinced that I need to buy one. :) Hopefully someone else can cut it up for me though, as I don’t trust my clumsy self with a knife right now.
This weekend was a mix of hiking, running errands, lounging, and watching OITNB.
