Hey Guys! Happy Wednesday!
Before I get into my What I Ate Wednesday post, I just have to mention Real Housewives of NYC (because I’m writing this post as I’m watching the show). I loved this weeks show about Dorinda and Carol going to London to pick up Carol’s late husbands ashes. I’m a sucker for reality TV and all of the drama involved, but it’s always nice to see a “real” moment in someone’s life…. I thought this episode was really touching!
Okay, now on to the eats….
I have really been trying to incorporate more vegetables into my diet lately. With summer veggies and farmer’s markets galore, there’s kind of no excuse not to. So you will see that a bit in my meals.
Breakfast
Featured: a fried egg, 2 slices of center cut bacon, 1/2 avocado, slow cooker bakes apples and a tomato. I’m a big fan of eggs + vegetables in the morning. If I’m scrambling them then I usually mix in spinach but with a fried egg, I like to mix is up. I especially love avocado with an egg, and I will eat a tomato with anything. Have you ever noticed how farmer’s market vegetables are about 100x better than what you buy in the grocery store?
You guys- center cut bacon usually has less fat than turkey bacon. This might be the hill I die on as a dietitian.
I mentioned earlier this summer that I moved outside of Charlotte into a smaller town outside of the city. There are some negatives to this but one thing I am truly loving is the farmer’s market. They have a downtown farmer’s market on Wednesdays and Saturdays and then a smaller market every Monday at an indoor location. As if 3 markets in 1 week was not enough, they also randomly set up tables in the parking lot at my job. Farmer vegetables are usually cheaper than the grocery store, they taste better and the location is more convenient. In other words, there’s really no reason for me not to support the farmers… so I’m trying my best this summer.
Lunch
Please don’t hate on my lunch today but I had a peanut butter sandwich. Toasted. The best. Yes, I might still have eating habits of a 5 year-old.
Not pictured is a glass of milk, which is the perfect pairing for a toasted PB&J.
Side note: My favorite part about lunch is this:
I go home on my lunch break to take Lily out. She’s not too concerned with her mid-day walk… she mainly only cares about playing with her toy fox. She is always so excited when I come home and drags that fox all around the house. It’s a fun break during my day.
Snack

Dinner
So I made this crock pot dinner the other night that seemed amazing in my mind but didn’t quite come out as intended. Hate it when that happens, lol.
I chopped up a few different peppers, tossed in some mushrooms, topped it with 3 chicken breasts, covered it in marinara sauce and added some cheese right before it was done. The concept was great but the peppers got wayyyyy over cooked. Next time I will probably cook the chicken and marinara sauce by itself and then add the veggies an hour or two before it’s done. I’m going to give myself an A for effort, though.
Drink
A glass of vino while watching the Real Housewives of NYC. A guilty pleasure every Tuesday night!

They just sell it in the grocery store here
Peanut butter sandwiches are especially delicious when toasted! Your breakfast looks restaurant quality, so I think a “5- year old lunch” is totally acceptable. :D

I absolutely love that you’re supporting your local farmer’s markets! My husband, father-in-law, and my dad are all farmers so it’s so great to see someone appreciating the fruits of our labor :)
