Hey guys! Before I get this post started, I just wanted to say thanks so much for the positive feedback from yesterdayβs post about how to use google analytics to grow your blog. I *love* it when other bloggers post tips and tricks they have learned along the way, and I always want to share anything I learn as well. I actually have been writing that post off and on for several months so Iβm happppppy that several people said they found the info useful. Sadly, I have A LOT of other google analytics tips, so maybe I can muster up a Part 2 for that post someday! haha.
Status Currently
Being stared down by my dog. Iβm just telling you this because itβs making me uncomfortable and I donβt know if I will be able to finish this post.
Dizziness Update
I mentioned on Friday that I started dealing with some major dizziness issues that started Thursday evening. They were basically debilitating over the weekend. I followed up with my doctor on Monday and was diagnosed with vertigo. It is completely random and Iβm not sure what caused it. Itβs the first time Iβve ever had it and I will give you the basic summary of this condition: you feel like your entire world is spinning and that you are living in hell.
My doctor referred me to physical therapy and THANK YOU BABY JESUS I work in a hospital with an awesome rehab department and they were able to see me right away. I had the canalith repositioning procedure done yesterday and I am already feeling 1000x better. They said it might take a day or two to see if Iβm really back to normal, and I have a follow-up with them on Thursday.
Whatβs funny is that I was JUST bragging about how I was finished with physical therapyβ¦. jokes on me I guess.
What I Ate Wednesday
Are these link-ups going on anymore? Iβm not sure because I fell out of the blogosphere for a while. Either way, Iβm going to keep this train moving because I take approximately 900 pictures of food every week.
Breakfast
You are going to be completely shocked by this breakfast.
Cottage cheese? Fruit? Iβm sure youβre surprised. Iβm just really loving cottage cheese this summer because itβs cold, simple, requires no prep and has 20+ grams of protein in 1 cup. I got the blueberries fresh from someone at work and paired this with a diced nectarine.
Lunch
Lunch came in 2 parts.
Part Uno: I chopped up a tomato and cucumber from the farmerβs market, covered it in herbed goat cheese and drizzled red wine vinegar on top. Basically, this whole concoction was an excuse for me to eat a ton of goat cheese. And Iβm not sorry about it.
Part Dos: I was hungry about an hour later and ate a piece of toast with peanut butter and jelly. Because duh, peanut butter and jelly.
Snack
The main thing you should know about my eats this week is that I purchased a yellow watermelon for the first time. A farmer persuaded me to try it at the farmerβs market, and Iβm supposed to report back on Saturday and let her know the verdict.
Thoughts: the texture was similar to a pink watermelon but maybe a little more crunchy. It was sweet, but not in the same way as a pink watermelon. The seeds are bigger and harder (and uglier, haha). Overall I liked it but like pink watermelon better. I guess it doesnβt matter because I basically inhaled the entire thingβ¦ per usual for me!!
Dinner
Woop, kind of loved dinner this nightβ¦. a pork loin prepared in the slow cooker (so the meat completely fell apart- t.h.e.b.e.s.t.), garlic and herb quinoa and baked squash and zucchini.
Iβm off to play with Lilyβ¦. or walk herβ¦. or feed her. Or just figure out why sheβs staring me down.

Yum! Loving all the veggies throughout the day! Cottage cheese is seriously so good, though I usually add something for crunch.

Granola is good- a little goes a long way. I also like corn flakes or coconut chips.
I did join CDA again this year. The mentorship program was kind of a flop for me last year (my mentor was never really available), so I am hoping that turns out better, haha. I enjoyed being able to attend some of the seminars though! Do you plan to join?
I am going to re-join but haven’t yet. It’s on my to-do list! I had 2 mentees this year. I felt like I really helped one and then the other not so much. I relied on the thought that the program was mentee-driven, and I didn’t hear much from her. I hope the new structure next year works out better. If you ever want to come and shadow at my hospital, let me know!

I’m so glad you got your dizziness figured out. My oma has had bouts with vertigo as well, but I’m not certain what the resolution was.

My boyfriend is ALWAYS asking me to make pork but I can never bring myself to do it! Yours looks so good though.
Why don’t you like making pork? I like getting the loins and cooking them in a crock pot with a simple sauce. It takes pretty much no effort and I get a few meals out of it :)

I would love to know how you prepared everything you had for dinner tonight, it looks absolutely delish-but I’m so bad at knowing how to season meat in the crockpot (and how long to cook it!) and how long to cook veggies in the oven…but I need to know how because my husband would love that meal :)

Hey SS! Cooking a large cut of meat in the crock pot is super simple. There are so many ways you can do it and they almost always come out well as long as you don’t cook the meat for too long. With pork loans, I usually put a little bit of water or broth in the bottom of the crock pot first. Then I cover the loin in whatever herbs I feel like… italian seasoning is usually my favorite although I have bought several other seasoning mixes from a local spice shop that are great as well. I’m not sure if you like garlic but I usually add some of that as well. I cook on low for about 4-5 hours. I find that all slow cookers cook differently so I always try to be home to babysit the meat the first time I’m trying out a new cut in there :) I have the standard programmable Crock Pot and find that it cooks things more quickly than what recipes usually say. Anyway, for the vegetables, all I did was slice them, spray them with EVOO and sprinkle with salt, pepper and fresh rosemary. Very simple! Have a great night :)
