I am currently sitting at my desk in my PJs at 11:15am, thankful that I have today off! I was supposed to get a root canal this morning but my appointment got postponed. I have to say…. PJs + coffee + talking to you > root canal.
Just sayin’.
I thought today would be a good day to share the massive amounts of food photos I’ve been collecting on my camera. Okay, I actually won’t do that to you… but I did want to share some food that I’ve been loving this fall.
Pumpkin
I use to be incredibly obsessed with all things pumpkin. When fall rolled around, I would run to the store and buy every single pumpkin flavored item I could find. I’ve calmed down a little bit but have enjoyed pumpkin greek yogurt and pumpkin butter.
Surf and Turf Paella
I came across this recipe in my Clean Eating Magazine a few months ago and it has become a staple in my meal planning. It includes chicken, shrimp, peppers, onion, quinoa and seasonings. Now that I’ve made the recipe a few times, I have tweeked it a little bit:
- I prefer to make it with either chicken or shrimp, not both. So I omit one and double the recipe quantity of the other.
- I use 3 peppers instead of 2 to bulk up the veggies.
- I add frozen peas if I have them but otherwise leave them out.
- I serve with greek yogurt, sometimes blended with cilantro.
I love this recipe because it is all-in-one. Not a lot of dirty dishes to deal with!
Bulk Prepped Meatballs
I have been making big batches of meatballs and freezing them for a while now. They are so versatile and can be served in so many ways. I freeze them in individual servings (3-5 meatballs) so that they are easy to grab for one meal. Some meal ideas include serving them by themselves (which I do frequently), using them as salad toppings, adding them in pasta/spaghetti, making a balsamic glaze for them and even putting them on a sub.
Eggs
I like to eat 2 eggs in the morning when I have time to make them. I definitely go through phases when it comes to food and thought the egg phase would pass, but so far it has not.
Lunch Containers
I continue to have a love affair with my Sunsella 3-compartment lunch containers. They eliminate having to pack and wash several different containers when I pack my lunch.

Love those containers…I’ve been looking for something like that lately!
I looked at a bunch on Amazon and decided on the Sunsella ones. The only thing I don’t like about them is that you can’t remove each compartment separately, which can be annoying when you have hot and cold foods together. But I love that is is just 1 container to wash so I guess I can’t have my cake and eat it too :)
I recently did the meatball thing and loved having portable protein!!
