Hey guys! Happy Monday Hope you had a great weekend. I hung out with B and watched a movie on Friday, did my long tri ride on Saturday and then went out to dinner, and mostly chilled out on Sunday because I was feeling under the weather. Iβm not sure if I have a cold or if Iβm just dealing with allergies but Iβm hoping I can kick this thing soon. The past couple of weeks have had me a bit exhausted with starting a new job and trying to get adjusted to a new routine, but Iβm hoping that things are leveling off this week!
Here are some life/food updates for you guys that I have been meaning to post!
Cabarrus Brewing Company
Last weekend, I met up with some RD friends at Cabarrus Brewing Company in Concord for a going away get-together for one of the RDs. I used to go to Concord all the time when I lived in North Charlotte but that was a couple of years ago. I was happy to visit the area again and this was my first time going to CBC.
Iβm not a huge beer fan but they had a pear cider that I really liked, as well as a coffee beer that was pretty good.
The brewery doesnβt serve food themselves, but they have food trucks in case youβre hungry. A truck called Master Bacon was there, which served all different types of food covered in bacon!
B and I got a pork belly & bacon grilled cheese sandwich and some βtachosβ, which were tater tots served like nachos. Not the healthiest items but I knew it was going to be a splurge-type night.
I thought the brewery was a great place if you live up in the North Charlotte / Huntersville / Concord area and I liked that they arranged for a food truck to come to have food options!
Cowfish
B and I celebrated our β5 month anniversaryβ by going to Cowfish for dinner. It was indeed our 5 month anniversary if youβre keeping track of dates, but we mainly wanted an excuse to get our favorite appetizer- the tuna nachos!
We also got the philly roll and a spicy salmon roll.
Cowfish is a great place to go if you are a sushi lover but someone in your group would rather have a burger or something else. I really love their sushi so I stick with that, but I have heard many times that they have amazing burgers as well.
BBQ Slow Cooker Chicken
My love affair with the slow cooker continues. This past week I made BBQ chicken in my slow cooker using 2 large chicken breasts and 1/2 bottle of Trader Joeβs organic brown sugar barbeque sauce. I cooked it on high for about 4 hours and then pulled the chicken apart. I separated it right out of the crock pot into individual containers for work!
I read online that chicken breasts are really not that great to cook in the slow cooker and really you should use thighs instead. I appreciate that advice because sometimes I feel like my chicken can turn out a little dry. I really donβt experience that problem when I am cooking chicken breasts in a sauce, though, and the breast is healthier than the thigh.
Workouts, workouts, workouts
I feel like most of my evenings these days are filled with triathlon training. I will have the specifics of last weekβs training tomorrow in my training recap post but as my trainings are getting longer, I feel like they are kind of taking over all of my free time!!
I have now spent over 10 weeks training for this triathlon. I have seen so many changes in my strength and endurance, and I have grown so much in my athletic abilities. My body has also changed to be leaner and stronger. I think on both a mental and physical level, the balance between swimming, running, cycling and strength training was just what I needed after several back-to-back injuries.

Purse
I have been searching for a handbag that meets the following criteria:
- Black
- Small but not tiny
- Has both handles and a shoulder strap
- Does not have a center compartment
I saw a Marc Jacobs bag that fit the bill but I cannot bring myself to spend $500 on a small purse.
I was in the Coach outlet store the other day and came across this bag. It definitely fits the bill and I thought it was cute. Itβs $129. Iβm just not sure how I feel about Coach anymore, especially the outlet store where I think their purses are specifically made for the outlet. Thoughts?

Are you a slow cooker person?
This weekend was mostly spent relaxing before the school year starts again today. Where did the summer go? I typically ‘rediscover’ my slow cooker about once a year and use it a lot for a few weeks. I don’t know why I’m not more consistent with it, because it is so easy and makes delicious food!
It takes up a lot of counter space so mine stays under the cabinet. Sometimes it’s easy to forget about!
I LOVE COWFISH!! It’s so hard to eat there because they don’t take reservations but it is so worth it. I haven’t been to CBC yet – may have to try it out!
We have much better luck on earlier in the week or on Sunday afternoons. I think we only had to wait 15 minutes when we were there. But I’ve had to wait over an hour before!
I think that coach purse is cute. However, I’ve been wearing the same Target purse for about a year and a half now so I’m not exactly a purse fashion expert.
I have become such a purse snob over the past few years… Not good for my wallet!!
Happy 5 months :) I had a really relaxing weekend with a friend that came to visit and it was muchhh needed! Thats awesome you are seeing results with your tri training!

I love everything in this post!! I just went through all of my Coach purses and am selling them on eBay… I used to be obsessed! That is a really cute one!
I did that about 6 months ago but could only sell 1 for like $15 LOL
