Hey guys! Happy Tuesday!
I hope my U.S. friends had a fantastic President’s Day weekend. I started out the holiday weekend by enjoying this breakfast chicken sandwich made with love by B!
We have been trying to bring our A game to breakfast meal prep lately, and B had been looking online for a copycat recipe to make a Chick Fil A breakfast chicken sandwich. He found this marinade for the chicken that basically consists of apple cider vinegar, olive oil, and some seasonings. He let it marinade overnight and then stuck them on the griddle the next morning. The sandwich was made of chicken, an egg white omelet and a piece of cheese on a whole wheat english muffin. He prepared 4 chicken breasts and 4 eggs at once so that he would have breakfast for a few days. I loved the marinade and will definitely be using it for the chicken that I prep for salads and such throughout the week (I’d also completely omit the salt).
I was happy to have Monday off because I was in dire need of some unpacking time this weekend. I spent pretty much all of Saturday and Sunday unpacking (I actually finished! woo hoo!) and then I worked on these night stands yesterday:
I chalk painted these guys back in November but have just now gotten around to distressing them. For the painting, I started out with a lighter blue color but I ended up doing a top coat in an olive green color afterwards because I didn’t really love the blue.
I have been distressing them by sanding them down with a finer grit sandpaper. I like how you can see the blue a little bit underneath when they are sanded. The detailing in the drawers made everything a little more involved but I was finally able to finish the distressing last night.
Next I will need to paint them with a clear wax and then distress them more with a dark colored wax. I’ve never used dark wax before but I have been watching many YouTube videos! I will report back with the finished product
It’s back to work for me today. I’m excited because I have a dietetic intern doing her inpatient clinical rotations with me for the next few weeks. There is so much to learn in the hospital setting and I love to work with students. Hopefully she will learn a lot with me and that we will have a great time!
