We grew up together and have known each other since pre-school! Such a small world.
I am not a beer drinker but all of my friends are, so I’m always stuck with the less-than-stellar wine option at breweries. Thankfully Sycamore had a blueberry cider from Windy Hill Orchards that was really good! I was pretty excited They had a peach cider as well but I did not try it. I got a lamb pita from one of the food trucks for dinner.
The pita was so huge that I ended up only eating about 1/4 of the bread and then just at the rest with a fork.
RD friends fo’ life.
I spent a few minutes meal planning on Sunday morning and then hit up the grocery store to stock up on groceries for the week. Here’s what I came up with for meals this week:
- Pasta with veggies
- Creamy Cashew Mushroom Stroganoff
- Hoison Chile Shrimp with Green Beans (<—except I couldn’t find half of the ingredients at the grocery store so this should be interesting)
- Broccoli, Kale & Cheddar Quiche with Quinoa Crust
- Curried chicken and mixed vegetables over rice
I love to incorporate some non-meat options into my weekly meals when possible so I’m looking forward to trying the mushroom dish. The curried chicken dish and the pasta meal are both super simple, which leaves me 2 evenings this week to spend <20 minutes cooking dinner; I haven’t tried the other recipes yet so we’ll see how they go! If they are easy and good then they usually make it into the dinner rotation.
I am not loyal to any specific store but I mostly shopped at Trader Joe’s yesterday. t’s less expensive than other options and it’s right down the street. Here’s what I ended up with.
I also got a few frozen meals to stick in the freezer. They are not my first choice for dinners, but they are nice to have a back-up when dinner plans don’t pan out and I need a quick back up.
