Hey friends, Happy Friday!
Please pray for me today because I’m getting a crown at 7:30 this morning. The dentist may be drilling in my mouth as you’re reading this. There’s not enough valium in this world that would make me every be okay with that…
But in happier news….
I finished my last working day at my full-time job this week! I actually still have to go back on Monday to complete some exit paperwork but for all intents and purposes, I have moved on to the entrepreneur life. I will admit that I had a minor freak out when I first put in my notice. The feeling of giving up a salary and benefits has been super scary. But then I finished up at work and immediately felt a sense of relief, like I am getting ready to do amazing things with my life and my career. Let’s hope!
In case you are wondering, I am still going to working PRN for a hospital and part-time at local wellness company. I’m really excited to have more free time and autonomy with my schedule while still having a stream of steady income to cover the basic necessities. One of my primary goals throughout this transition was being able to remain financially independent and I’m pretty happy with the way things turned out.
On the food front? B has been working on a huge project that is due in a few weeks, so he has been coming home around bedtime recently. Since I’ve been on my own for dinner, I feel less motivated to cook. Do you ever feel like making a beautiful meal for someone is like giving them a gift? I do. I love spending time and making something delicious, and then being able to watch someone else enjoy it. Sometimes I don’t enjoy the whole process quite as much when I’m only giving that gift to myself… especially when I’m stuck with solo kitchen clean-up duty afterwards.
It has been a restaurant salad week for me this week, both from fast-casual Mediterranean places. One night I got a greek salad with shrimp from Tazikis and another night I got a greek salad from Zoe’s. Do you think I like greek salads?!
This salad is from Tazikis and the shrimp seasoning is off the charts. Another night, I had what I like to call ‘randoms’ dinner- a piece of quiche with quinoa crust, a slice of peanut butter toast and some random vegetables. Love solo dinners.
P.S. I have been trying to walk everywhere as much as I can these days just to be more active. Birks for the win as a summer sandal, although I know they aren’t the fashion statement. And I may look super crunchy? I need the arch support, yo.
