Hey friends! HAPPY FEBRUARY!
I hope you’re having a happy Thursday. This week has just been a blur for me- I can’t believe it’s almost Friday. If you’re an RD or RD2be then I have a post today about why I dropped all of my contract jobs in 2018.
I’m having a slower morning over here because I have clients all afternoon and into the evening. Some days I work long days, but I’m trying to take some time for myself in the mornings if I know I will be in my office until 7-8pm tonight. All about dat balance.
I’ve been doing a few housekeeping things this morning. The first is that I’ve been researching opening a SEP IRA. WHY IS ADULTING SO HARD? I had not thought much about my retirement since opening my PP, but B and I sat down and looked at business finances and we decided that I needed to open one. I also I fell into the rabbit hole of looking at new designs for my website. I am thinking of going for more of a minimalist look- what do you think?
It’s been a while since I talked about food and meals around here so I thought I would share what I’ve been eating lately
Breakfasts
If you follow me on Instagram then you already know that my breakfasts lately have been all over the place. It just depends on what I have going on in my schedule and what I’m feeling like at the time. I’ve not had any morning clients this week so I’ve had time to cook something at home. So farย I have made scrambled eggs, pancakes and then today I made oatmeal.
Some days when I’m super busy then I will just eat an RX Bar in the car and pack a heavier snack for later. It’s whatever works for me that day!
Charlotte Restaurant Week- Bernardin’s
Twice per year, Charlotte hosts a meal event called The Queen’s Feast. Restaurants all over the city have a limited 2/3/4 course menu for $35 and it’s a great way to be able to try multiple things on a menu at new restaurants.
We don’t participate in Queen’s Feast every single time, just because we already explore many restaurants in town. I also have a REALLY hard time having an appetizer, entree and dessert without feeling uncomfortable stuffed, so I’m never sure if it is really worth the cost. But anyway! I had never been to Bernardin’s before so we decided to make it a date night.
I got a tuna poke bowl as my appetizer, pan-seared black bass as my entree and creme brulee as my dessert.
I was originally trying to decide between a surf and turf steak and shrimp dinner or a pork porterhouse. But then our waiter said the bass was his favorite dish so I decided to change things up. It was SO good! Bernardin’s is a good restaurant option if you are looking for fine dining in the Uptown area.
Dinners
B has had work dinners all this week, which means I usually make 1-2 big meals and then eat them as leftovers all week. I bought pre-made stuffed peppers from Costco this week so I’ve had those, and then I made this pork loin meal with salad and asparagus.
I’m getting kind of tired of leftovers, so last night I used the pork loin to make a rice bowl with kale and balsamic reduction sauce. I use pre-cooked frozen rice from Trader Joe’s and pour it frozen right into the pan. Super simple!
I also recently tried making tofu again. I pressed the liquid out of it and then sauteed it with broccoli, rice and an asian sauce mixed with chicken broth. It was really good! It was also the first time I felt like I really cooked decent tofu :)
I’m thinking I may either grab lunch or dinner out today since I’m craving something different and we’re running short on groceries :)
This Weekend
Tomorrow’s going to be a long day for me- on the work front, Fridays are reserved for podcasting. I also have a physical therapy appointment where I’m supposed to get dry needling on my back. I seriously hate the idea of needling but I know from when I had my knee issue that it really did help a lot.
We also have Mexican dinner planned with friends for Friday night!
